Smoked Salmon Frittata

This smoked salmon frittata is easy to make, can be made ahead of time, and is delicious for breakfast, lunch, and dinner. Feel free to swap any of the add-ins for your favorite ingredients!

Difficulty: Easy

Total Time: 40 minutes

Active: 30 minutes

Serves: 6-8 people

Ingredients:

  • 3 Tbs butter or coconut oil
  • ½ cup diced onions
  • 8 large eggs
  • ½ cup milk
  • ¾ tsp salt
  • ¼ tsp pepper
  • 2 cups sliced cooked asparagus
  • 4 oz. smoked salmon, chopped
  • ¼ each of chopped fresh chives and flat leaf parsley

Instructions:

  1. Preheat the oven to 350 degrees.

  2. In a 10” ovenproof skillet, heat 3 Tbs of butter/oil over medium high heat until fragrant.

  3. Add onion and cook until softened, about 5 mins.

  4. In a bowl, whisk eggs, milk, salt and pepper then add remaining ingredients.

  5. Place the balls on a plate and refrigerate for at least 30 minutes to set. 

  6. Pour egg mixture into the skillet, stir then cook until edges start to pull away from the pan, 5-7 mins

  7. Move pan to oven and bake until set, 16-18 minutes.

  8. Cut it, eat it, enjoy it!
