Ingredients:1 lb Skirt Steak (or flank steak - depending on your taste/thickness preference)1/2-3/4 c Olive OilFresh Rosemary Sprigs (whole)2 Shallots or ½ bunch Spring OnionsCeltic Sea SaltFresh Ground Pepper2-3 large cloves Fresh Chopped GarlicDirections:*Peel all rosemary off of stems and save stems.*Combine rosemary, shallots/onions & garlic in olive oil. Let stand for 5 minutes. Put 1/3 of mixture in separate bowl (to be brushed onto meat while grilling).*Slice skirt steak into thin strips against the grain.*Marinate steak in olive oil mixture for minimum of 10 minutes – up to 45 minutes.*To skewer steak…Place on stems of rosemary stems, piercing the steak with a pairing knife to make easier to get it on (these are your skewers!)*Grill skewers on medium-high heat grill for 3-4 minutes, flipping after a couple minutes.
